The finish is also accompanied by mineral hints of the soils dominated by slate and granite.
Vinification of the Vermentino di Sardegna from Sella & Mosca
This wine clearly puts the focus on one grape variety, and that is Vermentino. For this wonderfully elegant single-varietal wine from Sella & Mosca, only immaculate grapes were used. In Sardinia, the vines that produce the grapes for this wine grow on soils of slate and granite. After harvesting, the grapes are quickly taken to the press house. Here they are selected and carefully crushed. Then fermentation takes place in stainless steel tanks at controlled temperatures. At the end of the fermentation, the Vermentino di Sardegna is allowed to further harmonize on its fine lees for a few months.

This Italian white wine is best enjoyed well chilled at 8 - 10°C. It is perfect as an accompanying wine to fruity endive salad, omelet with salmon and fennel or coconut-lime fish curry.
