Vinification of the Bodegas Alvarez y Diez Alevilla Verdejo
This white wine clearly focuses on one grape variety, and that is Verdejo. For this exceptionally elegant single-varietal wine from Bodegas Alvarez y Diez, only first-class grape material was brought in. After the grape harvest, the grapes reach the press house by the fastest route. Here they are sorted and carefully broken up. Fermentation then takes place in stainless steel tanks at controlled temperatures. At the end of the fermentation, the Alevilla Verdejo is left to harmonize on the fine lees for a few months.
