Vinification of the Altenberg Riesling Auslese from Von Othegraven
The basis for the elegant Altenberg Riesling Auslese from Mosel are grapes from the Riesling grape variety. The fact that the Riesling grapes thrive under the influence of a rather cool climate also has an influence on the ripeness of the grapes that cannot be dismissed. This results, among other things, in particularly long and even grapes and rather moderate alcohol content in the wine. After harvesting, the grapes are immediately taken to the winery. Here they are selected and carefully broken up. This is followed by fermentation in stainless steel tanks at controlled temperatures. At the end of fermentation, the Altenberg Riesling Auslese is allowed to further harmonize on the fine lees for several months.
