Vinification of the Zenato Amarone Valpolicella Classico Riserva
The basis for the powerful Amarone Valpolicella Classico Riserva from Veneto are grapes from the Corvina, Rondinella and Sangiovese grape varieties. After the grape harvest, the grapes are immediately taken to the winery. Here they are sorted and carefully crushed. Fermentation then takes place in stainless steel tanks and small wooden barrels at controlled temperatures. At the end of fermentation, the Amarone Valpolicella Classico Riserva can continue to harmonize on the fine lees for 60 months.
