Vinification of the Apothic Cabernet Sauvignon from Apothic Wines
The starting point for the first-class and wonderfully balanced cuvée Apothic Cabernet Sauvignon from Apothic Wines are Cabernet Sauvignon, Pinot Noir and Zinfandel grapes. After the harvest, the grapes are quickly taken to the press house. Here they are sorted and carefully broken up. Fermentation follows in large wood at controlled temperatures. The fermentation is followed by aging for several months on the fine lees before the wine is finally drawn off. Once the wine is finished, the Apothic Cabernet Sauvignon is carefully harmonized.
