The Ars Memoria from the pen of Vitivinicola Tandem from Aragon presents a dense, purple-red color in the swirled glass. The first nose of the Ars Memoria reveals notes of blackberry, sour cherry, redcurrant and plum. The fruity components of the bouquet are joined by notes of barrel ageing and even more fruity, balsamic nuances.
This Spanish wine tastes pleasantly dry. It was bottled with 3 grams of residual sugar. As you would expect from a wine, this Spanish wine naturally delights with the finest balance despite its dryness. Aroma does not necessarily require a lot of residual sugar. On the palate, the texture of this powerful red wine is wonderfully velvety and dense. Thanks to the balanced fruit acidity, the Ars Memoria flatters the palate with a pleasing sensation without lacking freshness. The finish of this very mature red wine from the wine-growing region of Aragon, more precisely from Navarra DO, impresses with its exceptional persistence.
Vinification of the Ars Memoria from Vitivinicola Tandem
This wine clearly focuses on one grape variety, namely Cabernet Sauvignon. Only flawless grapes were brought in for this wonderfully powerful single-varietal wine from Vitivinicola Tandem. After the grape harvest, the grapes are transported to the winery as quickly as possible. Here they are sorted and carefully broken up. This is followed by fermentation in stainless steel tanks and small wooden barrels at controlled temperatures. Once fermentation is complete, the powerful Ars Memoria is aged for 18 months in French oak barrels.

This Spanish wine is best enjoyed at a temperature of 15 - 18°C. It goes perfectly with lamb ragout with chickpeas and dried figs, Thai cucumber salad or spicy curry with lamb.
