The Azazel penned by La Chimera from Piedmont presents a dense ruby color in the wine glass. The first nose of Azazel reveals notes of raspberries and blackberries. The fruity components of the bouquet are joined by forest floor, garrigue and blueberry.
The La Chimera Azazel convinces with its straightforward dry flavor. It was bottled with exceptionally little residual sugar. As you would expect from a wine, this Italian naturally enraptures with the finest balance despite all dryness. Excellent taste does not necessarily require a lot of sugar. On the palate, the texture of this powerful red wine is wonderfully velvety, fleshy and dense. The final of this red wine from the wine-growing region of Piedmont finally thrilled with beautiful reverberation. The finish is also accompanied by mineral hints of the limestone-dominated soils.
Vinification of La Chimera Azazel
This powerful red wine from Italy is cuvetiert from the grape varieties Avanà, Barbera and Dolcetto. In Piedmont, the vines that produce the grapes for this wine grow on soils of limestone. After the manual harvest, the grapes are quickly taken to the press house. Here they are sorted and carefully crushed. Fermentation follows in stainless steel tanks at controlled temperatures. After the end of fermentation, the Azazel can harmonize further for 10 months on the fine lees.
Recommendation for La Chimera Azazel
This Italian is best enjoyed at a temperature of 15 - 18°C. It is perfect as an accompaniment to goose breast with ginger red cabbage and marjoram, ossobuco or duck breast with sugar snap peas
