In the glass, the Baer Sauvignon Blanc by Oliver Zeter presents a brilliant shimmering light yellow color. In the center, this white wine shows a vivid golden yellow color. If you give it some air in the glass by swirling, this white wine is characterized by a wonderful brilliance that makes it dance nimbly in the glass. With a little time in the glass, this Old World white wine reveals wonderfully expressive aromas of apple, quince, pear and nashi pear, rounded out by oriental spices, dark chocolate and cinnamon contributed by aging in wooden barrels.
The Oliver Zeter Baer Sauvignon Blanc presents itself pleasantly dry to the wine enthusiast. This white wine never appears coarse or meager, as one might expect from a wine icon wine segment. Due to its concise fruit acidity, the Baer Sauvignon Blanc is wonderfully fresh and lively on the palate. The finale of this white wine with good aging potential from the wine-growing region of the Palatinate, more precisely from Hambach, finally impresses with a beautiful reverberation. The finish is also accompanied by mineral hints of the soils dominated by sandstone.
Vinification of the Oliver Zeter Baer Sauvignon Blanc
This elegant white wine from Germany is vinified from the Sauvignon Blanc grape variety. The grapes grow under optimal conditions in the Palatinate region. The vines here dig their roots deep into soils of sandstone. Clearly, Baer Sauvignon Blanc is also determined by climatic and stylistic factors of Hambach. This German wine can be described as an Old World wine in the best sense of the word, with an exceptionally impressive presentation. The fact that Sauvignon Blanc grapes thrive under the influence of a rather cool climate also has a considerable influence on the ripening of the grapes. This manifests itself, among other things, in particularly long and evenly ripened grapes and rather moderate alcohol content in the wine. After harvesting, the grapes reach the winery as quickly as possible. Here they are selected and carefully crushed. Fermentation follows in concrete and large wood at controlled temperatures. After the completion of fermentation, the Baer Sauvignon Blanc is aged for another 18 months in 900 l tonneau of oak.
Food recommendation for the Baer Sauvignon Blanc by Oliver Zeter
This German wine is best enjoyed moderately chilled at 11 - 13°C. It is perfect as an accompaniment to spaghetti with yogurt mint pesto, omelet with salmon and fennel or leek tortilla.
