Vinification of the Barcelona Cava Brut Reserva from Vilarnau

The basis for the elegant Barcelona Cava Brut Reserva from Catalonia are grapes from the grape varieties Parellada, Viura and Xarel-lo. When the perfect physiological ripeness is ensured, the grapes for the Barcelona Cava Brut Reserva are harvested exclusively by hand without the help of coarse and less selective full harvesters. After the harvest, the grapes are quickly taken to the winery. Here they are sorted and gently pressed. Then the fermentation of the base wines takes place. After the assemblage of the cuvée, further aging follows on the basis of classic bottle fermentation. This is followed by bottle aging for 18 months.
