The Barolo Cannubi from Borgogno is a long-lasting, very elegant and pure red wine and comes from the Italian DOCG Barolo wine-growing region, the famous Cannubi single vineyard.
In the glass, this wine already delights with its dense ruby red color with purple highlights and a violet core. The power and potential are already apparent on the nose. Lush aromas of red and black fruits (blackberry, raspberry, plum and cherry) blend with spicy notes and a floral hint of rose petals. This Italian red wine reveals all its power on the palate. The firm structure harmonizes wonderfully with the strong, complex body. The aromas on the nose give this wine its wonderful elegance. The fine minerality is perfectly integrated and accompanies the very long finish.
Vinification of the Borgogno Cannubi Barolo
The Cannubi vineyard - the heart of the entire Barolo wine region and probably the most famous and renowned. The Giacomo Borgogno & Figli winery owns 1.3 hectares of south-facing vineyards at an altitude of 290 to 320 meters above sea level.
After harvesting the Nebbiolo grapes, the must is first fermented spontaneously in concrete vats for 12 days. This is followed by a maceration period of 40 to 50 days at a constant temperature of 29 degrees Celsius. After racking, malolactic fermentation takes place for around 15 days at a temperature of 22 degrees Celsius.
Once the entire fermentation process is complete, this wine is aged for a total of 4 years in large Slavonian oak barrels (volume 4500 liters). Finally, this wine rounds off harmoniously in the bottle for a further 6 months.
