The Barolo Chinato from Fontanafredda is a flavoured red wine that caresses the nose with intense and complex aromas. These include aromas of cinchona bark, cinnamon, cloves, nutmeg and aromatic herbs.
On the palate, this Barola Chinato presents itself with a wonderful bitter-sweet balance and primarily reflects the cloves from the bouquet.
Vinification of the Fontanafredda Barolo Chinato
The tradition of infusing wine with an alcoholic infusion of herbs and spices dates back to the end of the 19th century. This extended the shelf life of the wine and allowed it to be marketed as a medicinal drink.
After the harvest, fermentation took place in stainless steel tanks with regular circulation of the must. The must then remained on the skins for a few days to optimize the extraction of aromas. More than 20 herbs were macerated and then aged for 6 months in oak barrels before being added to the Barolo with the addition of alcohol and sugar.
