Vinification of the Coppo Barolo
This Barolo is something special. As one of the few historic winegrowers from Piedmont, Coppo is allowed to vinify Barolo outside the defined production area. The winery is located in Canelli, the heartland of Asti and Barbera, even though it borders directly on the Barolo region. The background to this is that it was necessary to prove that the winery actually produced Barolo before the DOCG was established.
For this Barolo, the best and healthiest Nebbiolo grapes, which grow on the vineyards on the hillsides of the Barolo production area, are selectively harvested by hand and macerated with the skins. During this process, the skins are repeatedly and gently lifted. The wine is then aged for 36 months in large French oak barrels.

Barolo is still considered the most important wine in Italy. As the wine of kings, it goes well with sophisticated dishes but also with classic Piedmontese cuisine.
