Vinification of the Firriato Bayamore Rosso di Rosso Sicilia
The basis for the first-class and wonderfully powerful Bayamore Rosso di Rosso Sicilia cuvée from Firriato are Frappato, Merlot and Syrah grapes. After being harvested by hand, the grapes are transported to the press house as quickly as possible. Here they are selected and carefully crushed. This is followed by fermentation in small wood at controlled temperatures. At the end of this process, the powerful Bayamore Rosso di Rosso Sicilia is matured for another 9 months in French oak barriques. The ageing in wooden barrels is followed by a long period of bottle ageing, which makes this red wine even more complex.
