Vinification of Elena Walch Beyond the Clouds Alto Adige

This powerful white wine from Italy is made from Chardonnay, Gewürztraminer and Sauvignon Blanc grapes. The grapes grow under optimal conditions in Trentino-Alto Adige. Here, the vines dig their roots deep into limestone soils. The Beyond the Clouds Alto Adige is also clearly determined by the climate and viticultural style of the Alto Adige/South Tyrol DOC. This Italian wine can literally be described as an Old World wine, which is exceptionally elegant and complex. The grapes for this white wine from Italy are harvested exclusively by hand once optimum ripeness has been ensured. After being harvested by hand, the grapes are quickly taken to the press house. Here they are sorted and carefully crushed. This is followed by fermentation in small wooden vats at controlled temperatures. Fermentation is followed by 16 months of maturation in oak barrels. The ageing in wooden barrels is followed by extensive ageing in the bottle, which makes this white wine even more complex.
