Vinification of the Bocca di Lupo Castel del Monte from Tormaresca
The basis for the powerful Bocca di Lupo Castel del Monte from Apulia is grapes from the Aglianico grape variety. Bocca di Lupo Castel del Monte is an Old World wine through and through, as this Italian wine exudes an extraordinary European charm that clearly underlines the success of wines from the Old World. The ripeness of the grapes for this Aglianico wine is influenced to a considerable extent by the climate of the growing region. In Apulia, the grapes thrive in a warm climate, which is reflected in particularly well-ripened grapes and a rather high must weight, among other things. The grapes for this red wine from Italy are harvested exclusively by hand when they are perfectly ripe. After hand-picking, the grapes are immediately taken to the winery. Here they are sorted and carefully crushed. Fermentation then takes place in small wooden vats at controlled temperatures. At the end of fermentation, the Bocca di Lupo Castel del Monte is aged for 39 months in French oak barrels. The ageing in oak barrels is followed by considerable bottle ageing, which makes this red wine even more complex.
