The facilities at the winery have been designed with simplicity in mind in the winemaking process, to avoid as much as possible the suffering of the grape before it is processed. The wine is aged in a selection of the best French coopers, using 80% French oak and 20% American oak. The behaviour of each cooper is followed and each roasting of the barrels is carefully agreed upon. The elaborations are calm with long cold macerations, nothing is demanded from the grape. Fermentation is a spontaneous process in the Bodegas, caused by native yeasts, without any addition of oenological products (acidifiers, tannins, glucose, enzymes, etc.). Every detail is very important to you, from the cleaning of every utensil used to the strict controls carried out on the grapes 3 weeks before the harvest until the wine bottle is sold to the customer.
