The powerful Bordeaux Haut Medoc from France is a cuvée, made from the grape varieties Cabernet Sauvignon and Merlot. When perfectly ripe, the grapes for Bordeaux Haut Medoc are harvested particularly quickly and at the coolest possible time of day to preserve their aromas. After the hand harvest, the grapes are quickly taken to the winery. Here they are selected and carefully broken up. Fermentation then takes place in stainless steel tanks and small wood at controlled temperatures. Vinification is followed by aging for several months on the fine lees before the wine is finally drawn off.
