Vinification of the Botijo Blanca from Bodegas Frontonio

The grapes for this Spanish white wine are harvested by hand and grow under particularly natural conditions and are processed under proper garage winery conditions - i.e. not a large winery with huge halls, but a boutique winery. After fermentation, the Botijo Blanco is left on the full lees for another 3 months, stirred again and again so that the wine can refine even further before it is finally bottled.
