Vinification of the Brunello di Montalcino from Col d'Orcia
The grapes for this Brunello come from special Sangiovese clones and undergo a rigorous selection process after being harvested by hand. The yield for this wine from Col d'Orcia is almost half (45 hl/ha) of the maximum yield of 80 hl/ha permitted for Brunello di Montalcino.
Fermentation takes place on the skins for approx. 18-20 days at a controlled temperature below 28°C in 150 hl stainless steel tanks. The aim is to achieve the highest possible extraction of color and tannins. The Brunello di Montalcino from Col d'Orcia then matures for 3 years in 25-50 and 75 hl Slavonian and Allier oak barrels, followed by at least 12 months of refinement in the bottle.
