Vinification of the Brut Dosaggio Zero Cuvée A of Mola
The basis for the balanced Brut Dosaggio Zero Cuvée A from Tuscany are grapes from the Aleatico variety. The grapes grow under optimal conditions in Tuscany. The vines here dig their roots deep into soils of volcanic rock. Following the harvest, the grapes are immediately taken to the winery. Here they are selected and carefully crushed. Now follows the fermentation of the base wines. Once the cuvée is assembled, further aging follows based on the Charmat method. Subsequently, the Mola Brut Dosaggio Zero Cuvée A matures for 4 months on the full yeast.
