The Brùt Franciacorta DOCG from Contadi Castaldi is a lively, youthful brut with a fine and long-lasting perlage, straw yellow in color with greenish reflections in the glass. On the nose, Contadi Castaldi's Spumante Brùt is fresh, with beautiful aromas of lime blossom and hints of citrus fruit, white peach and green pepper. On the palate, it delights with beautiful tension, crisp, fresh and straightforward, tasty, refined, with a very pleasant and long-lasting finish.
Vinification of the Brùt Franciacorta DOCG by Contadi Castaldi
For this Franciacorta Brut, Chardonnay 80%, Pinot Noir 10% and Pinot Blanc 10% are vinified together, representing the typical grape varieties of the region in their composition. The grapes are harvested at the end of August, beginning of September. After gentle pressing and static cold decanting, alcoholic fermentation takes place in stainless steel tanks with selected yeasts over a period of 20 days, followed by partial malolactic fermentation. The first ageing of the wine takes place for 7 months partly in stainless steel and partly in barriques, after which the wine is transferred to the bottle for bottle fermentation on the fine lees, which lasts between 20 and 26 months. After dégorgement, the sparkling wine is stored in the bottle for a further 3 to 4 months before it is released for sale.
