Vinification of Brut Nature from Cascina Fonda
The basis for the balanced Brut Nature from Piedmont are grapes from the grape variety Yellow Muscat. Following the harvest, the grapes are brought to the press house by the fastest route. Here they are sorted and gently pressed. This is followed by the fermentation of the base wines. After the assemblage of the cuvée follows the further aging based on the Charmat method. Subsequently, the Cascina Fonda Brut Nature matures for several months in the bottle and is finally disgorged.

This Italian is best enjoyed very well chilled at 5 - 7°C. It is perfect as an accompanying wine to coconut-lime fish curry, roasted trout with ginger pear or omelet with salmon and fennel.
