Vinification of Drappier Brut Nature
This champagne is made from 100% Pinot Noir. Only the musts from the first pressing are used, which are naturally clarified and fermented at low temperature for 2 weeks. This is followed by malolactic fermentation. After bottling and 2nd fermentation, this champagne matures in the bottle for two to three years.
