With the Dourdon Vieillard Brut Tradition comes a first-class champagne in the wine glass. Here he offers a wonderfully bright, light red color. The bubbles of this champagne shine in the glass incredibly fine, elegant and long-lasting. If you swirl the wine glass, you can perceive a first-class balance in this sparkling wine, as it does not stand out on the glass walls in a watery, syrupy or liqueur-like way. To the nose, this Dourdon Vieillard sparkling wine shows all sorts of quince. As if that were not already impressive, lime and beeswax are added by the expansion in stainless steel.
Balanced and multilayered, this light, creamy and crisp sparkling wine presents itself on the palate. The finale of this sparkling wine from the Champagne wine-growing region, more precisely from Champagne, finally captivates with beautiful reverberation. Vinification of Dourdon Vieillard Brut Tradition
Basis for the first-class and wonderfully balanced Cuvée Brut Tradition of Dourdon Vieillard are Chardonnay, Pinot Meunier and Pinot Noir grapes. The grapes grow under optimal conditions in Champagne. Here, the vines dig their roots deep into soils of clay and limestone. Of course, Brut Tradition is also defined by more than just the Champagne soil. This Frenchman can be described as an Old World wine in the best sense of the word, presenting itself as exceptionally distinguished and complex. The fact that the Chardonnay, Pinot Meunier and Pinot Noir grapes thrive under the influence of a rather cool climate also has an influence on the development of the vintage that cannot be dismissed. This manifests itself, among other things, in particularly long and uniform grapes and rather moderate alcohol content in the wine. Following the harvest, the grapes are quickly brought to the winery. Here they are selected and carefully broken up. This is followed by fermentation of the base wines. After the champagne is blended, further aging follows based on the Méthode Traditionelle. Subsequently, the Dourdon Vieillard Brut Tradition matures for 6 months on the full yeast.
