Vinification of the winery Manz Cabernet Mitos Beerenauslese
This wine clearly focuses on one grape variety, and that is Cabernet Mitos. Only the best grape material was harvested for this wonderfully elegant varietal wine from Weingut Manz. In Rheinhessen, the vines that produce the grapes for this wine grow on soils of loess. The fact that the Cabernet Mitos grapes thrive under the influence of a rather cool climate also has a very high influence on the development of the vintage. This manifests itself, among other things, in particularly long and uniform grapes and rather moderate alcohol content in the wine. After harvesting, the grapes are quickly taken to the pressing house. Here they are sorted and carefully crushed. Then fermentation takes place in stainless steel tanks at controlled temperatures. After the end of fermentation, the Cabernet Mitos Beerenauslese can continue to harmonize on the fine lees for a few months.
