At optimal maturity, the grapes for Cabernet Sauvignon are harvested exclusively by hand without the help of rough and unselective grape harvesters. After the grape harvest, the grapes reach the Presshaus as quickly as possible. Here they are selected and carefully ground. This is followed by fermentation in small wood at controlled temperatures. At the end of this process, the Cabernet Sauvignon is aged for another 12 months in French oak barriques.
