The Cabernet Sauvignon from Boekenhoutskloof in the South African wine-growing region of Stellenbosch is a varietally pure, expressive and finesse-rich red wine.
In the glass, this wine shimmers a rich ruby red with purple highlights. A varietal-pyramidal bouquet enchants the nose. The opulent aromatics reveal currants, black cherries and red plums, perfectly complemented by herbs of Provence. The aromatic richness continues on the palate as well. The red stone fruits are perfectly complemented by hints of boysenberry, pencil, pipe tobacco and tea leaves. The tannins are very fine-grained - almost powdery. These contribute to the lively character of this South African red wine. Yet the firm acidity and smoky cedar undertones are not lost. The concentrated finish is wonderfully long.
Vinification of the Stellenbosch Boekenhoutskloof Cabernet Sauvignon
Grapes from the Helderberg vineyard have a classic graphite-like profile that can be attributed to soil type, altitude and mild maritime climate.
Once the grapes arrive at the winery of Boekenhoutskloof, they are cold-soaked in stainless steel tanks. This is followed by alcoholic fermentation. The mash is fermented at 27 to 30 degrees Celsius, frequently racked and occasionally pumped over(délestage). This is followed by a prolonged malolactic fermentation in 225-liter barriques.
Once the fermentation process is complete, this wine ages for 18 months in French oak barrels (60% of which are new wood).
