    Cabernet Sauvignon Stellenbosch 2014 - Boekenhoutskloof

    The Cabernet Sauvignon from Boekenhoutskloof from the South African wine-growing region of Stellenbosch is a red wine that is pure, expressive and rich in finesse.

    In the glass this wine shimmers in a rich ruby red with purple highlights. A variety-pyish bouquet enchants the nose. The opulent aromas reveal currants, black cherries and red plums, perfectly complemented by herbs from Provence. The fullness of the aromas also continues on the palate. The red stone fruits are perfectly complemented by hints of boyberries, pencil, pipe tobacco and tea leaves. The tannins are very fine-grained - almost powdery. These contribute to the lively character of this South African red wine. The firm acidity and the smoky cedar wood undertones do not sink. The concentrated finish is wonderfully long.

    Vinification of the Stellenbosch Boekenhoutskloof Cabernet Sauvignon

    The grapes from the Helderberg vineyard have a classic graphite-like profile, which can be traced back to the type of soil, altitude and mild maritime climate.

    Once the grapes have arrived in the Boekenhoutskloof cellar, they are soaked cold in stainless steel tanks. This is followed by alcoholic fermentation. The mash is fermented at 27 to 30 degrees Celsius, frequently circulated and occasionally pumped over (Délestage). This is followed by longer malolactic fermentation in 225 litre barriques.

    Once the fermentation process is complete, this wine matures for 18 months in French oak barrels (60% of which are new wood).
