Vinification of La Chimera Carcajrun
This powerful red wine from Italy is made from the grape variety Gamay. The grapes grow in optimal conditions in Piedmont. The vines here dig their roots deep into soils of limestone. After harvesting, the grapes quickly reach the winery. Here they are sorted and carefully crushed. Fermentation follows in stainless steel tanks at controlled temperatures. After the completion of fermentation, the Carcajrun can further harmonize for 10 months on the fine lees. The expansion in oak barrels is followed by a long bottle aging, which makes this red wine even more complex.
