Vinification of the Carmen on Air Carménère from Triebaumer
The basis for the powerful Carmen on Air Carménère from Austria is grapes from the Carmenère grape variety. After harvesting, the grapes are quickly taken to the press house. Here they are sorted and carefully crushed. Fermentation then takes place in small wood casks at controlled temperatures. At the end of fermentation, the powerful Carmen on Air Carménère is aged for several months in oak quarter barrels.
