At the time of optimal ripeness, the grapes for Casavecchia Monte Maggiore are harvested exclusively by hand without the use of punishing and less selective machines. After the hand harvest, the grapes arrive quickly at the winery. Here they are selected and carefully broken up. Fermentation then takes place in small wood at controlled temperatures. Vinification is followed by aging for several months on the fine lees before the wine is finally bottled.
