Vinification of Castillo De Cheste Semi-Dulce Tinto
The fully ripe grapes of the Anecoop, harvested by hand, are first destemmed, mashed and the resulting mash fermented at controlled temperatures in stainless steel tanks. Then the mash is pressed and this wine matures for a while in the tanks.
