Vinification for the Chardonnay Terroir Littoral from Fortant de France
Before the grapes for this single-varietal Chardonnay are fermented, they receive special treatment: they are carefully destemmed and the must is kept refrigerated for 2 days to allow the aromatic potential to be fully realized. The musts from the single vineyards are then vinified separately to preserve their typical character.
All fermentation processes are carried out at low temperatures to avoid the loss of aromatic substances and to give the wine its freshness. Afterwards, the wine is left on the lees for 3 months with careful stirring. After the tasting of the base wines, they are then combined into a single varietal cuvée.
