Vinification of the San Michele a Torri Chianti Colli Fiorentini
The basis for the first-class and wonderfully balanced Chianti Colli Fiorentini cuvée from San Michele a Torri are Canaiolo, Colorino, Merlot and Sangiovese grapes. After harvesting, the grapes are transported to the winery as quickly as possible. Here they are selected and carefully broken up. This is followed by fermentation in stainless steel tanks and large wooden barrels at controlled temperatures. Once fermentation is complete, the elegant Chianti Colli Fiorentini is aged for several months in oak barrels. Once the wine is finished, the Chianti Colli Fiorentini is carefully harmonized.
