The grapes for this red wine from Italy are harvested exclusively by hand when they are perfectly ripe. After being harvested by hand, the grapes are immediately taken to the winery. Here they are sorted and carefully crushed. Fermentation then takes place in small wooden vats at controlled temperatures. At the end of fermentation, the Chianti Colli Senesi is matured for a few months in oak barriques.
