Vinification of the Chianti from Fattoria Montellori
This powerful red wine from Italy is made from the Sangiovese grape variety. After harvesting, the grapes are transported to the press house as quickly as possible. Here they are selected and carefully crushed. This is followed by fermentation in stainless steel tanks at controlled temperatures. At the end of fermentation, the Chianti can continue to harmonize on the fine lees for 12 months. Ageing in the barrel is followed by a long maturation in the bottle, which makes this red wine even more complex.
