Chip Dry - Taylor's Port
The Chip Dry from Taylor's Port from the Portuguese wine-growing region Douro combines the grape varieties Malvasia, Rabigato, Esgana Cão, Viosinho and Gouveio.
In the glass this port shines in a bright straw yellow with green-golden reflections. The seductive bouquet enchants the nose with notes of nuts and dried fruit. On the palate this port wine has a lively fruit - especially juicy peach and ripe grapes - and a surprisingly fresh acidity. The fine residual sweetness highlights the fine nutty spice of the nose and the maturity of this Portuguese wine perfectly. Volume and fullness come to the fore even better. In the long finish this port is wonderfully dry and lively.
Vinification of Taylor's Port Chip Dry
The grapes for this port wine are harvested by hand in the Douro valley. Vinification takes place in the same way as with a classic port, except that the yeast is allowed to work longer with this dry port than with a sweet port. As soon as the main part of the sugar is fermented, the high percentage distillate is added.
Now this port rests over the winter in large barrels until it is shipped to the lodges of Vila Nova de Gaia in spring. There this port wine matures for 4 to 5 years in large, old oak barrels.
Food recommendation for the Chip Dry Taylor's Port Douro
This dry port is a wonderful aperitif or can also be served as a refreshing long drink (portonic). Simply mix one part Taylor's Chip Dry with two parts Tonicwater and garnish on ice with fresh mint - wonderfully refreshing.
