Vinification of Scala Francesco Ciro' Rosato Bio
The balanced Ciro' Rosato Bio from Italy is a single-varietal wine, organically pressed from the Gaglioppo grape variety. The grapes grow in optimal conditions in Calabria. The vines here dig their roots deep into soils of clay. When they are perfectly ripe, the grapes for Ciro' Rosato Bio are harvested exclusively by hand, without the use of coarse and hardly selective full harvesters. After the harvest, the grapes reach the press house by the fastest route. Here they are selected and carefully crushed. Then fermentation takes place in stainless steel tanks at controlled temperatures. After the completion of fermentation, the Ciro' Rosato Bio can harmonize further for 3 months on the fine lees.

This Italian red wine is best enjoyed tempered at 15 - 18°C. It is perfect as an accompaniment to roasted calf's liver with apples, onions and balsamic vinegar sauce, duck breast with sugar snap peas or veal boiled beef with beans and tomatoes.
