Vinification of Sergio Mottura Civitella D'Agliano Rosso
This balanced red wine from Italy is vinified organically from the grape variety Merlot. In Lazio, the vines that produce the grapes for this wine grow on soils of volcanic rock. After the manual harvest, the grapes are quickly transferred to the press house. Here they are selected and carefully crushed. Fermentation then takes place in stainless steel tanks at controlled temperatures. The fermentation is followed by aging for several months on the fine lees before the wine is finally bottled.
