Vinification of the Clasico Brut from Codorníu
The basis for the first-class and wonderfully elegant cuvée Clasico Brut from Codorníu are Parellada, Viura and Xarel-lo grapes. Following the hand harvest, the grapes are quickly taken to the press house. Here they are sorted and carefully crushed. This is followed by the fermentation of the base wines. After the assemblage of the cava follows further aging based on the Méthode Traditionelle, classic bottle fermentation. Subsequently, the Codorníu Clasico Brut matures for 9 months in the bottle.
