The Cognac Napoleon from Cognac Chabasse is a harmonious, powerful brandy from the grape varieties Ugni Blanc (80%), Colombard (15%) and Folle Blanche (5%).
In the glass this cognac shines in a warm amber with orange-red highlights. The warm bouquet is characterized by the long maturation in wooden barrels. There are aromas of juicy apricots together with delicate port notes (ripe black fruits), sweet spices - especially vanilla - as well as nuances of oak wood. With an expressive personality, this French brandy is a masterful delight on the palate. The elegant aromas of the nose are reflected and surrounded by a present, gentle body. At the same time, this cognac has a powerful fullness that accompanies the long, aromatic finish.
Vinification of Chabasse Cognac Napoleon
The grapes for this cognac are harvested very early and fermented to a very acidic white wine. The acidity protects against oxidation, as cognac is not sulphurised. This base wine is now distilled twice in the copper kettle according to the traditional charentaiser distillation process. Wooden barrels from Limousin oak are chosen for the maturation. This cognac matures in these barrels for 12 years.
