The Cognac XO Impérial from Cognac Chabasse is an outstanding top cognac that combines the grape varieties Ugni Blanc, Colombard and Folle Blanche.
In the glass, this cognac has a radiant amber shimmer with golden brown shades. The expressive bouquet is wonderfully drawn by the long barrel maturity. In addition to the vanilla aromas and notes of oak wort, fine hints of dried fruit are also revealed. On the palate, this French brandy convinces with a dense, supple body that harmonizes wonderfully with the aromas of the nose. The exceptional fullness is due to the long ageing of the wood. The long finish is full of vanilla nuances.
Vinification of Chabasse Cognac XO Impérial
The grapes for this cognac are harvested very early and fermented to a very acidic white wine. The acidity protects against oxidation, as cognac is not sulphurised. This base wine is now distilled twice in the copper kettle according to the traditional charentaiser distillation process. Wooden barrels from Limousin oak are chosen for the maturation. This cognac matures in these barrels for 40 to 50 years.
