The Colombard Chardonnay from Yvon Mau is a typical white wine cuvée for the region - Colombard (80%) as well as Chardonnay (20%) - and presents itself with a straw-yellow color and green reflections.
The complex bouquet reveals a lush, powerful and clear scent of green apple and tropical fruits such as banana. The elegant aromatics continue on the mid palate, with great freshness and impressive length. A tremendously harmoniously balanced acidity rounds out the palate, which leads into a fresh finish.
Vinification of the Yvon Mau Colombard Chardonnay
The grapes of the Yvon Mau winery are destemmed, crushed and the resulting must rests for a short standing time. The must is then pressed and the resulting must is fermented in stainless steel vats under temperature control.
