Vinification of Allegrini Corte Giara Soave
The basis for the first-class and wonderfully elegant Corte Giara Soave cuvée from Allegrini is Chardonnay and Garganega grapes. After harvesting, the grapes are immediately taken to the press house. Here they are selected and carefully crushed. Fermentation then takes place in stainless steel tanks at controlled temperatures. At the end of fermentation, the Corte Giara Soave can continue to harmonize on the fine lees for a few months. Ageing in wooden barrels is followed by considerable maturation in the bottle, which makes this white wine even more complex.
