Vinification of the Costamolino Vermentino di Sardegna DOC from Argiolas
The Costamolino Vermentino di Sardegna is part of the classic line from Argiolas. The grapes for this fine white wine grow on the hills of Medio Campidano in the south of the Mediterranean island of Sardinia. Costamolino is made from 100% Vermentino grapes, which are selectively harvested and gently pressed. Only the must from the first pressing is used to make the wine. The must is cooled to 10-12°, followed by natural decanting, temperature-controlled fermentation at 16-18° for 20 days and brief ageing on the fine lees, also at a controlled temperature, before this fresh white wine is bottled.
