Cristina Medium - Gonzalez Byass
The Cristina Medium from González Byass is a wonderful, velvety soft sherry from the Spanish wine-growing region DO Jerez, which is vinified from the grape varieties Palomino Fino (87%) and Pedro Ximenez (13%).
In the glass this sherry shines in a warm amber colour with golden highlights. The intense and aromatic bouquet reveals intense notes of spices, dried figs and raisins, as well as subtle nuances of oak spices. On the palate this sherry presents itself velvety soft and full-bodied with a fine and fruity sweetness. The long finish is extremely aromatic.
Vinification of Gonzalez Byass Cristina Medium
The grapes are harvested separately for each grape variety and fermented separately in stainless steel tanks. The subsequent 6-year ripening in the Soleras is also carried out separately. Only after this ripening period are the two grape varieties married and placed in the Christina Solera for a further 2 years. After a total of 8 years of maturation, this wonderful sherry is filled into the bottle. Only 600 litre American oak barrels are used.
