The Cuvée Especial of José Pariente from Castile - León reveals a bright, light yellow color in the wine glass. If you swirl the wine glass, you can perceive a first-class balance in this white wine, because it does not stand out on the walls of the glass neither watery nor syrupy or liqueur-like. The first nose of the Cuvée Especial presents nuances of lime, orange blossom and jasmine. The fruity components of the bouquet are joined by gingerbread spice, oriental spices and cinnamon.
The José Pariente Cuvée Especial presents itself to the connoisseur wonderfully dry. This white wine never appears coarse or meager, as one might expect from a top wine. In the finish, this youthful white wine from the wine-growing region of Castile - León finally inspires with beautiful length. Once again, hints of lime and jasmine show through.
Vinification of the José Pariente Cuvée Especial
The balanced Cuvée Especial from Spain is a single-varietal wine, pressed from the Verdejo grape variety. Of course, the Cuvée Especial is also determined by more than just the soil Rueda DO. This Spaniard can be described as an Old World wine in the best sense of the word, and it is extraordinarily impressive. The fact that the Verdejo grapes thrive under the influence of a warm climate also has a considerable influence on the development of the vintage. This manifests itself, among other things, in particularly well ripened grapes and rather high alcohol content in the wine. When the perfect physiological ripeness is ensured, the grapes for the Cuvée Especial are harvested exclusively by hand without the help of coarse and less selective full harvesters. After the harvest, the grapes are immediately taken to the press house. Here they are selected and carefully broken up. Then fermentation takes place in concrete at controlled temperatures. Fermentation is followed by aging for several months on the fine lees before the wine is finally drawn off.
Food recommendation for José Pariente Cuvée Especial
This Spanish white wine is best enjoyed moderately chilled at 11 - 13°C. It is perfect as an accompaniment to spinach gratin with almonds, leek tortilla or chickpea curry.
