The Cuvée Especial of Pago de Cirsus from Aragon offers a dense purple color in the wine glass. Held at a slight angle, a transition of hue toward garnet red is evident at the edges of this barrel-aged wine. Ideally poured into a red wine glass, this Old World red wine presents wonderfully expressive aromas of blackberry, black currant, mulberry and plum, rounded out by other fruity nuances contributed by aging in wooden barrels.
This Spanish wine delights with its elegantly dry flavor. It was bottled with exceptionally low residual sugar. This is a real quality wine, which clearly stands out from simpler qualities and so this Spaniard enchants naturally with all dryness with the finest balance. Taste does not necessarily require a lot of sugar. On the palate, the texture of this powerful red wine is wonderfully silky, velvety and creamy. The final of this red wine from the wine-growing region of Aragon, more precisely from Navarra DO, finally thrills with considerable reverberation.
Vinification of the Cuvée Especial from Pago de Cirsus
The basis for the first-class and wonderfully powerful Cuvée Cuvée Especial from Pago de Cirsus are Merlot, Syrah and Tempranillo grapes. After the grape harvest, the grapes are immediately taken to the winery. Here they are selected and carefully crushed. This is followed by fermentation in small wood at controlled temperatures. After the completion of fermentation, the Cuvée Especial is aged for another 12 months in French oak barrels.
Food recommendation for the Pago de Cirsus Cuvée Especial
This Spanish red wine is best enjoyed at a temperate temperature of 15 - 18°C. It is perfect as an accompaniment to Roasted Calf's Liver with Apples, Onions and Balsamic Vinegar Sauce, Lamb Stew with Chickpeas and Dried Figs or Spaghetti with Capers and Tomato Sauce.
