On the palate, the Dolceacqua of Maixei starts wonderfully aromatic, fruity and balanced. On the palate, the texture of this balanced red wine presents itself wonderfully silky. In the finish, this red wine from the wine-growing region of Liguria finally inspires with considerable length. There are again hints of raspberry and strawberry. In the reverberation, mineral notes of the clay-dominated soils are added.
Vinification of Maixei Dolceacqua
The basis for the balanced Dolceacqua from Liguria are grapes from the grape variety Tibouren. In Liguria, the vines that produce the grapes for this wine grow on soils of clay. At the time of optimal ripeness, the grapes for Dolceacqua are harvested exclusively by hand without the help of punishing and hardly selective machines. After the harvest, the grapes are immediately sent to the winery. Here they are selected and carefully milled. Fermentation then takes place in stainless steel tanks at controlled temperatures. After its end, the Dolceacqua can continue to harmonize for a few months on the fine lees.
