Vinification of the Dolceluna Primitivo di Manduria Dolce Naturale from Pietra Pura
The basis for the balanced Dolceluna Primitivo di Manduria Dolce Naturale from Apulia is grapes from the Primitivo grape variety. After the harvest, the grapes reach the winery as quickly as possible. Here they are sorted and carefully broken up. This is followed by fermentation in small wood at controlled temperatures. The vinification is followed by a maturation of 12 months in barriques of French and American oak.
