The Dolcetto d'Ovada from Tacchino in Piedmont presents a bright, ruby red color in the swirled glass. This single-varietal Italian wine shows wonderfully expressive notes of blackcurrants, mulberries, blackberries and blueberries in the glass. There are also hints of oriental spices, dark chocolate and cocoa bean.
This Italian wine impresses with its elegantly dry taste. It was bottled with just 0.9 grams of residual sugar. As you would expect from a wine of this type, this Italian wine naturally delights with the finest balance despite its dryness. Excellent taste does not necessarily require sugar. On the tongue, this balanced red wine is characterized by an incredibly dense texture. Thanks to the balanced fruit acidity, Dolcetto d'Ovada flatters the palate with a velvety feel without lacking freshness. On the finish, this red wine from the Piedmont wine-growing region finally delights with good length. Once again, there are hints of blackcurrant and blueberry. Mineral notes from the marl and clay-dominated soils are added in the finish.
Vinification of the Tacchino Dolcetto d'Ovada
The basis for the balanced Dolcetto d'Ovada from Piedmont is grapes from the Dolcetto grape variety. The grapes grow under optimal conditions in Piedmont. Here, the vines dig their roots deep into clay and marl soils. The grapes for Dolcetto d'Ovada are harvested exclusively by hand, without the help of coarse and less selective machines, at the time of optimum ripeness. After manual harvesting, the grapes are immediately taken to the press house. Here they are selected and carefully crushed. This is followed by fermentation in stainless steel tanks at controlled temperatures. At the end of fermentation, the Dolcetto d'Ovada can continue to harmonize on the fine lees for 9 months.
